Spotlight: Ricotta hotcakes, banana and honeycomb butter at Bills: Sydney

I'm a big fan of Bill Granger, in fact I am currently flicking through his cookbook 'Easy' in which there are countless recipes I am dying to try.  His food is attractive, simple and delicious.

Over the years I have eaten at every one of his Sydney cafes but my last visit in January 2013 haunted me until my recent return.  You see, I don't typically order sweet breakfasts, I inevitably find myself in a sugar induced hyperactive state, unable to function like a normal person for the rest of the day.  On our visit to Bills' Surrey Hills cafe in January I ordered the crab, chorizo and kim chee fried brown rice and TBS went immediately for the ricotta hotcakes.  I've heard my father-in-law wax lyrical about these hotcakes over the years but I was sceptical.  I mean how good could they really be?

SS I am sorry I ever doubted you because they were bloody good.  I was allowed one fluffy, honeycomb-butter smeared bite and I was hooked.  I have literally been thinking about these hotcakes for the past 8 months.

SO, on our most recent trip I fulfilled my fantasy and ordered them.  Fluffy pillows of hotcakes stacked on top of slices of banana topped with honeycomb butter arrived with a pouring jug of maple syrup. They were everything I dreamed they would be.  The sweetness of the maple syrup was balanced by the slight saltiness of the butter and the hotcakes were as light as air.
