I'm a sucker for a Singapore Sling but I don't often order one as it's hard to get right. Too often I've been stuck with an artificial, bright red, cherry concoction that I somehow have to covertly throw into a unsuspecting pot plant.
My most memorable Singapore Sling was from The Jazzy Brick in Vientiane, a cocktail bar run by a Laotian bloke who studied in Australia. It was boozy, tart, sweet- heaven in a glass. Unfortunately Laos is a touch too far to travel for a fix so I am delighted to have discovered somewhere a little closer to home.
Gardel's Bar in Surrey Hills, upstairs from Porteño, is the perfect place to lounge back, sip cocktails and nibble on some pinxtos whilst waiting for a table downstairs or just because. It's relaxed, the service is attentive and the drinks are sensational.
My Singapore Sling came adorned with a slice of orange, a fresh cherry and a colourful cocktail brolly. The glass it was served in was beautiful. A Singapore Sling contains gin, benedictine, cherry brandy, Cointreau, grenadine, pineapple juice, lime juice and a dash of bitters- that's a whole lotta ingredients to mix just right. But mix them right they did. Gardel's Bar did a stellar job of creating a drink which is tangy, sweet and sour. It leaves you wanting more.
